Assortment of fresh colorful microgreens arranged on a table

Microgreens you say?

Tiny greens, mighty nutrition

Microgreens are the young seedlings of vegetables and herbs, harvested just after the first true leaves appear. Small in size, but they bring intense flavor, vivid color, and concentrated nutrition to every plate.

What exactly are microgreens?

Microgreens are young vegetable greens harvested 7 to 21 days after germination, right when the first true leaves unfold. They sit between a sprout and a baby salad green: bigger than a sprout, more tender and flavorful than a fully grown leaf.

Because they are harvested at the peak of their growth cycle, microgreens concentrate flavor, color, and nutrients into every bite. A small handful can transform an ordinary salad, sandwich, or smoothie into something special.

At Verdant Harvest Farms we grow our microgreens hydroponically in a controlled environment, with no pesticides, herbicides, or synthetic fertilizers, and we cut them within hours of delivery.

Why they pack such a punch

Research from the University of Maryland and the USDA found that microgreens can contain up to 40 times more nutrients by weight than their fully grown counterparts. Vitamins C, E, and K, beta-carotene, and a range of antioxidants all concentrate in those first tender leaves.

A one-ounce serving delivers serious nutrition: a burst of vitamins and minerals with very few calories. It is one of the simplest upgrades you can make to your daily plate.

How to enjoy them

Salads

Toss a generous handful into any salad for texture, color, and a fresh, peppery or sweet crunch.

Smoothies

Blend sunflower or pea shoots into your morning smoothie for a mild, nutritious green boost.

Sandwiches & wraps

Swap lettuce for microgreens — the flavor is brighter and the nutrition is bigger.

Garnishes

Top soups, eggs, tacos, and pizzas with a pinch of microgreens for a restaurant-quality finish.

Juicing

Juice wheatgrass-style trays of greens for a concentrated, living shot of nutrients.

Finishing dishes

Stir them into pasta, grain bowls, or stir-fries at the very end, when the heat is off.

What we grow

Our rotating lineup includes pea shoots, sunflower greens, radish, broccoli, kale, arugula, basil, and beet greens, among others. Availability changes with the season and the weekly planting schedule.
